Fatty acids and vegetable oils are an indispensable part of a healthy and sustainable diet, but they have not received enough attention in research and food development in recent years compared to other nutrients such as proteins. We want to change this in our "InnoLipids" network: The innovative field of cellular agriculture will benefit from new cultivation methods of fast-growing organisms such as yeast, lipid cells and microalgae. In this way, fatty acids and vegetable oils can be produced more effectively and sustainably and represent a real alternative to palm oil and cocoa butter. Further, more efficient treatment of vegetable side-streams, new extraction methods offer the potential to increase yields in traditional oil pressing, avoid unwanted by-products and improve the taste in the end product on a long term. Through the international network of German and Austrian research and development entities, we want to initiate new paths for the European food industry to integrate innovative products and processes.
